Confetti Green Beans

Confetti Green Beans
2 tablespoons olive oil
1/2 cup Confetti Peppers
1/2 cup onion, chopped
2 cloves garlic, minced
4 cups fresh cut green beans (approx 1 pound)
1 cup chicken stock
1/2 teaspoon salt
1/2 teaspoon pepper
Into a large sauté pan cook olive oil, peppers, onions, and garlic, on moderate heat 5 minutes until softened. Stir in green beans, salt and pepper and cook a few minutes more. Add chicken stock and bring to a boil. Reduce heat, cover, and cook 10 minutes until beans are tender, stirring occasionally. Serve. Enjoy!
