Candied Yams
6 cups fresh yams, peeled and cut into 2 inch chunks
(2 or 3 large potatoes=approximately 2 pounds)
4 cups water
1-1/4 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 stick butter
2 Tablespoons flour
Place yams and water into a large pot. Bring to a boil, reduce heat to moderate and cook uncovered 5 minutes. Remove potatoes, reserving 2 cups of the liquid in the pot. Place 1/4 cup of this liquid in a bowl and stir flour into it until it becomes a smooth paste. To the reserved liquid in the pot stir in sugar, spices, butter, and flour paste until all ingredients are well-blended. Return potatoes to the pot and cook 10 minutes over moderate heat, stirring occasionally until potatoes are tender and sauce thickens. Serve. Enjoy!
