Sassy Mango Salad
2 cups diced ripe mango
1/2 cup diced tomatoes
1 Tablespoon minced fresh ginger
1 cup Confetti Peppers
1/2 cup fresh chopped parsley or cilantro
1/2 cup fresh lemon juice or lime juice
1 teaspoon black pepper
1-1/2 teaspoons salt
Place all ingredients in a large bowl. Toss gently to combine. Serve as a side dish or with nachos as a salsa.
